Whew! I was let off the hook of jury duty and am now relaxing a bit at my desk!
I had a lovely lunch of yogurt, veggies with salt and pepper and a slice of whole wheat toast, which I dipped in some olive oil, salt & pepper. I also had an apple.
It was filling and really simply delicious.
I also stumbled across this fun article on Self.com about some healthy tapas recipes. If you're having a party or get together any time soon, these sound really divine and easy.
