We ate out a lot this weekend, but a lot of my dishes were pretty cheap and easy. Let's take a gander, shall we?
Friday
Panini Sandwiches:
Onion Rolls: $3.10 for 6 rolls
Turkey: $2.50 for 8 oz.
Cheese: $2.50 for 8 oz.
Tomatoes: Probably $.50 worth
Roasted Red Bell Peppers: $1.99 a jar
Red Onion: $.10 ? (got this for cheap a while ago)
Artichokes: $.99 for a jar of Meditteranean salad (on clearance; SCORE!)
That brings each sandwich to about $2.18 a piece, depending on what was on it. Not bad, eh?
Saturday
Tuna Salad
Tuna, 2 cans: $.69 each
Great Northern beans: $.69
Red Onion: $.10 ? (got this for cheap a while ago)
Parsley: about $.30 worth?
Oil, vinegar, salt and pepper
That comes out to an impressive $0.84 a serving (for 3 people). We had some leftover, which I scarfed so not to have to transport it.
Caprese Salad
Fresh Mozzarella: $2.69ish
Tomatoes: probably $1 worth
Basil: $1.99
Homemade vinaigrette
For three, it came out to $1.90 a serving. We had mozzarella and basil left over, but it was too neglible to try to figure out. Besides, if you can make it all, do it, because you will want to eat it all up in one sitting!
Sunday
Roasted Hens, Potatoes and Onions with Asparagus
Hens: $2.50 each
Red Potatoes: $2ish
Asparagus: $.77
Cheap red onions
Really, only two servings, because Kendall didn't eat that much, so the grand total is $2.65 a serving. A yummy and cheap Sunday lunch!
