Here's the slow-cooker lasagna recipe I made this weekend. I got it from Real Simple. What I liked about it was that it was easy, easy to control the fat and salt, it taste fresh, is meatless AND is pretty cheap! I subbed fresh spinach for the chard, because I couldn't find any in our grocery store.
I don't have my receipt with me right now, but I remember some prices off the top of my head...
Lasagna noodles: about $1.50
Diced Tomatoes: $2.15
Ricotta: $1.99
Spinach: $1.69
Mozzarella: $1.77
That's a total of $9.10! Not bad. I think it will be about 8 meals, which comes to $1.14 a meal. Steal!
